Erythorbic acid is an orally active compound. Erythorbic acid improves the radiation resistance of Listeria monocytogenes. Erythorbic acid can react with free radicals and reduce oxidative damage. Erythorbic acid has weak antiscorbic activity. Erythorbic acid can prevent oxidative discoloration in meat products[1][2].
In Vitro:Erythorbic acid (sodium salt form, 0.1%-10% w/v) can improve the radiation resistance of Listeria monocytogenes in solution[1].
In Vivo:Erythorbic acid (100 mg daily; p.o., in diet; once a day; 7 weeks) can maintain normal growth, serum alkaline phosphatase levels, tooth structure development, and collagen formation after wounding in guinea pigs[2].
