Maltopentaose is the shortest chain oligosaccharide. Maltopentaose is a substrate for α-amylases. Maltopentaose can be classified as maltodextrin and is also used in a study to investigate glycation and phosphorylation of α-lactalbumin. Maltopentaose is used to study the inhibition kinetics of human pancreatic α-amylase by dehydrodieugenol B[1][2][3]. In Vitro:Maltopentaose (25-500 μM) hydrolysis is inhibited by Acarbose (HY-B0089), α- (HY-B1513), β- (HY-107201) and γ- (HY-W040040) cyclodextrins, and the Phaseolus protein inhibitor α-AI[2].
Maltopentaose (50-400 μM) is used to study the inhibition kinetics of human pancreatic α-amylase by dehydrodieugenol B[3].
