Vicine, an alkaloid glycoside found mainly in fava beans, is toxic in individuals who have a hereditary loss of the enzyme glucose-6-phosphate dehydrogenase and may cause haemolytic anaemia.Vicine is an inactive compound that is hydrolysed by the intestinal microflora to a highly reactive free radical generating compound, the aglycone divicine when Vicine enters the body through food[1][2][3][4].
In Vitro:The varieties “Gemini” and “Locale di Putignano” has high content of Vicine at the stage of dry seeds. The Vicine content undergoes remarkable variations during the various stages of the seed development and ripening up to the dry seed stage[2]。
In Vivo:"High levels" of Vicine might have shortened the birds' survival time by enhancing the neurotoxicity induced by "lower levels" of BCA[1].
