Ethylvanillin is an orally active antioxidant that can affect cytochrome P450 activity in rats. It can also be used as a food flavoring agent in the field of food processing[1][2]. In Vitro:Ethylvanillin (25 mM, 180 min) inhibits AAPH-induced hemolysis in the erythrocyte suspension in erythrocyte oxidative assay[1]. Ethylvanillin (20 mM, 2 hours) shows antioxidant activity in the erythrocyte suspension in ABTS radical assay[1]. In Vivo:Ethylvanillin (32.7 mg/kg, p.o., single dose) increases plasma ethyl vanillic acid levels and antioxidant activity in ICR mice[2]. Ethylvanillin (3, 15, and 75 mg/kg, p.o., once daily for 7 days) induces CYP2E1 activity and inhibits CYP1A2 activity in Wistar rats [2].
